Baked Oatmeal for One

This is literally the cutest little breakfast. My parents bought me this gorgeous ramekin from Tuesday Morning, and of course I knew that the first thing I wanted to make in it was oatmeal! 💛


Ingredients

  • 1 ripe banana

  • 1/2 cup water/nondairy milk

  • 1/2 cup oatmeal

  • 1 tsp cinnamon

  • Pinch of salt

  • 1/2 tsp baking powder

Add-in suggestions

  • Nuts/seeds

    • Walnuts

    • Peanuts

    • Chia seeds

    • Hemp seeds

    • Flax seeds/meal

    • Almonds

    • Pumpkin seeds

    • Pecans

  • Nut butter

  • Fruit

    • Blueberries

    • Raspberries

    • Blackberries

    • Diced apples

    • Dried coconut

    • Dried cranberries

  • Chocolate

    • Chocolate chips

    • Cocoa nibs

    • Cocoa powder

      • Vanilla Extract

      • Protein Powder

      • Apple sauce

      • Dairy-free yogurt

Method

  1. Preheat the oven to 350 degrees F (177 degrees C). Grease your little ramekin or pan with coconut oil.

  2. In a small bowl, mash the banana and mix it with the water/milk.

  3. In a separate bowl, combine all of the remaining ingredients.

  4. Add the wet mixture to the dry mixture and stir. Pour it into the pan.

  5. Bake for 20-25 minutes.

  6. Let cool and enjoy!


Personal Notes and Tips

  • Some ideas to fancy it up: top it with jam or banana slices, pour a little nut milk over it, or if you are having this as a dessert (honestly this kinda tastes like an oatmeal cookie so I totally get it) you could top it with some almond whipped cream or ice cream......oh dang!

  • If you are going to add cocoa powder, just remember to either only add a little bit or an additional sweetener.
