For a long time this has been one of my favorite staple recipes! It brings such a healthy and delicious spin to your typical store-bought jam. I love to use different mixes of berries and try it on lots of different foods: toast, oats, crackers, nut butter, muffins, cookies, pancakes, waffles, yogurt, protein balls...🍓🍒🌿 there are endless possibilities ;)
Ingredients
3 cups of fresh or frozen berries
3 to 4 tbsp maple syrup (or other liquid sweetener)
2 tbsp chia seeds
1 tsp vanilla
Method
In a medium saucepan, combine the berries and 3 tablespoons of maple syrup. Bring it to a simmer over medium to high heat, stirring frequently.
Reduce the heat to medium-low and simmer for about 5 minutes, lightly mashing the berries and leaving some whole for texture.
Stir in the chia seeds and cook for about 15 minutes or until your desired consistency. Make sure you are stirring frequently.
Remove the pan from the heat and stir in the vanilla and any additional sweetener if desired.
Store the jam in an airtight container in the fridge for 1-2 weeks. The jam will also thicken up even more as it cools.

Personal Notes and Tips
If you are making strawberry chia seed jam, run the strawberries in the food processor until they are almost smooth before cooking them in the saucepan. This just helps the process go a little faster since strawberries take a little longer to break down.
I just buy a bag of frozen mixed berries or frozen strawberries to make this recipe.
