Chocolaty Chickpea Bars

I almost called these Frozen Brownie Bars because I honestly love these as a frozen treat or snack! And yes, I understand that the chickpea part seems a little weird, but trust me, these do not taste like chickpeas at all. They are a gooey chocolaty goodness!


Ingredients

  • 1 can of chickpeas, rinsed

  • 2 heaped Tbsp of almond or peanut butter

  • 1/4 cup rolled oats

  • 4 Tbsp coconut oil

  • 1/2 cup maple syrup

  • 1 Tbsp vanilla

  • 1 tsp baking powder (if baking)

  • 1/2 cup chocolate chips

  • 1/4 cup walnuts, optional


Method


Dough

  1. Blend all of the ingredients

  2. Enjoy 😋


Bars (optional)

  1. Pour dough into a pan and bake at 350 degrees F for about 35 minutes

  2. Remove from oven and let cool

  3. Cut and store them in a fridge or freezer.


Personal Notes and Tips

  • The batter makes really good edible brownie dough!

  • If you are baking them, be careful not to bake them for too long because they get kind of crumbly (unless you like that)

  • I love to store them in the fridge or freezer! I think they taste a lot better this way!
