Coconut Cashew Chia Seed Pudding

This is my go-to chia seed pudding flavor. I absolutely love love love cashews and cashew butter, and of course, can't go wrong with coconut. This recipe is super simple especially if you have these ingredients lying around in your house. We always have an abundance of chia seeds at home because we just buy them in bulk, and this recipe is a great way to make the most of them and have a great breaky ready for you in the morning!☀️



Ingredients


  • 3 tbsp of chia seeds

  • 1 cup of coconut milk

  • 1-3 tsp Maple syrup

  • 1/2 tsp Vanilla extract

  • Toasted coconut

  • Cashew butter

Optional

  • Protein powder

  • Cinnamon

  • Granola

  • Fruit

Method

  • In a mason jar, add the chia seeds, milk, vanilla extract, maple syrup, and any additional add-ins.

  • Mix well, then cover and store in the fridge overnight.

  • Top with coconut and cashew butter.

  • Enjoy!


Personal Notes and Tips

  • You don't have to use coconut milk, so if you don't have any at home do not worry, the coconut milk just adds to the coconut cashew essence.

  • If you are going to add protein powder, add more milk or less chia seeds (unless you like it really thick).

  • Feel free to increase the amount if you want a more filling meal or leftovers ;)
