If you are asking yourself right now, what the heck is Danish Grød?!?!, well let me tell you...it is certainly SCRUMPTIOUS.
For all of you oatmeal lovers, here is an interesting and delicious spin on your typical oats.
Funny story, when I first made this recipe, I intended to make half the recipe because we were low on oats, except when I was making it, I forgot to cut all of the ingredients in half (primarily the salt). Now I'm sure you can imagine how I felt when I took my first bite.
Ingredients
For the Grød
2 cups unsweetned plain almond milk
2/3 cup large flake rolled oats (not instant)
1/4 tsp sea salt
1 tbsp chia seeds (substituting or omitting is not recommended, as they thicken the porridge)
For the Cardamom Berries
1 cup mixed berries, fresh or frozen
2 tsp birch syrup (maple syrup or molasses works as well)
1/4 tsp ground cardamom
Optional Toppings
Nuts or seeds
Nut butter
Banana slices
Non-dairy yogurt
Method
Make the Grød
In a medium saucepan, combine milk, oats, and salt
Bring to a boil, reduce to medium-low, and cook, stirring often for 5 minutes
Stir in chia seeds
Cook, stirring often 3-5 minutes longer until porridge has thickened
Make the Cardamom Berries
In a small saucepan, combine berries, birch syrup (or other sweetener), and cardamom
Cover, and cook over medium heat, until berries are softened and warm (3-5 minutes)
Serving
To a bowl, add oats; spoon over berries and any of the suggested toppings.
Serve
Personal Notes and Tips
When you cut the recipe in half, don't forget to cut in half all of the ingredients! Don't repeat my mistakes!
