Definitely Delicious! Super sweet and flavorful, and the aroma...oh my goodness!!! If you have the misconception that vegan desserts are bland and not quite as delicious, these will completely change your mind...😉
Ingredients
1/2 cup dates
1/2 cup coconut (The book just says coconut, but I use unsweetened shredded coconut)
3/4 cup maple syrup
1/2 cup chopped nuts (optional)
1/4 cup oil (The book just says oil, but I use coconut oil)
2 cups oat flour
1/4 tsp salt
1/2 tsp baking powder
1 1/2 tsp vanilla extract
Method
Combine the dates, coconut, maple syrup, nuts (if using), and oil in a food processor.
Sift the flour, salt, and baking powder.
Combine the flour mixture with the date mixture.
Spoon. onto a cookie sheet.
Bake in the oven for about 20 minutes at 325 degrees Fahrenheit (163 degrees Celsius).
Personal Notes and Tips
I don't buy oat flour, I just put oats in a food processor or blender to make it.
I did not sift through all of the flour, it was taking me way to long.
Note that if you are going to make your own flour, I would recommend blending it for a reasonably long time to make sure it is very fine.
