Frozen Macadamia Berry Cake

My brother and I faced off in a dessert challenge and this is what came out of it! We could not use recipes, and I knew I wanted to make a raw vegan cake, so I wrote down a basic outline of ingredients for the base and the top, which I will share with you so you can get creative in the kitchen! 🍰


Since I made this cake just for fun, I did not write down exactly how much of the ingredients I ended putting in, but I will share with you the ingredients that I used so you can mess around with them and make this cake to your liking! 😉

Ingredients


Base

  • Macadamias

  • Melted coconut oil

  • Vanilla extract

  • Agave nectar

  • Unsweetened Shredded Coconut


Top

  • Coconut cream

  • Frozen blueberries

  • Frozen raspberries

  • Frozen blackberries

  • Agave nectar

  • Nut milk


Method


  1. In a food processor, blend together all of the ingredients for the base. Continue to taste test and make changes to your base. The base should have a consistency like cookie dough. If it is too wet add some more nuts and coconut. If it is too dry add more coconut oil or sweetener.

  2. Choose a pan to be the shape of your cake and layer it with parchment paper. Have some parchment paper hanging over the sides so it will be easier to remove your cake from the pan once you are done.

  3. Pour the base mixture into the pan.

  4. Freeze.

  5. In a food processor, that you may or may not have cleaned, blend together the ingredients for the top. Continue to taste taste and make changes to your top.

  6. Remove your pan with the base from the freezer. Pour your top mixture over the base.

  7. Return the pan to the freezer for a couple of hours. Be patient to make sure that the middle freezes as well.

  8. Remove your pan from the freezer.

  9. Gently remove your cake from the pan and slice it.

  10. Store in the freezer. 🐧


Personal Notes and Tips


  • Instead of parchment paper, you can use coconut oil to grease your pan. If you do it this way, make sure to grease the pan really well, honestly I just used my hand, and when you try to remove the cake from the pan use a warm towel to heat up the sides of the pan so it slides out easier. (I didn't have parchment paper at home so this is how I did it, so never fear, it is possible!)

  • Be careful not to overfill your food processor or it might explode. I am telling you this from personal experience. Yes, mine did explode! Had a great time cleaning that up...😒.


Basic Guide To Making Raw Slices/Cakes


Base

  • For stick: coconut oil, soaked dates, nut butter

  • For base: flour, nuts, seeds

  • For sweetness: soaked dates, liquid sweetener (agave, coconut nectar, maple syrup), dried fruit

  • For added flavor: vanilla extract, salt, spices (cinnamon, ground ginger, pumpkin spice), cocoa powder

  • For added nutritional benefits: Hemp seeds, chia seeds, flax seeds, cocoa nibs, protein powder, any special powders (maca, camu, acai)

Top

  • For creaminess: soaked cashews, coconut creme, nut milk, nut butter

  • For sweetness: liquid sweetener, soaked dates, fresh/frozen/dried fruit,

  • For added flavor: cocoa powder, vanilla extract, salt, spices

  • For added nutritional benefits: Hemp seeds, chia seeds, cocoa nibs, special protein powders

  • For a caramel layer: nut butter, soaked dates

This recipe is my personal combination of some of my favorite ingredients. The basic guide is what I put together after looking at a bunch of different recipes for raw vegan cakes and slices. Hopefully it helps and inspires you in the kitchen! 😉
