Golden Granola

Inspired by some granola I had at a brunch, this recipe will make your mornings and snacks more enjoyable and simple! I love to prepare one or two batches of this granola and store it in glass jars for my smoothie bowls, whenever I just want some quick cereal, and for my family to have some healthier snacking options. 😉🌿


Ingredients

  • 1 cup of oats

  • 1/3 cup shredded coconut

  • 1/2 cup chopped walnuts

  • 1/2 cup pepitas (pumpkin seeds)

  • 1 cup golden raisins

  • 1 tsp cinnamon

  • 1/4 tsp pink salt

  • 2 tbsp melted coconut oil

  • 1/3 cup maple syrup


Method

  1. Preheat the oven to 350 degrees F (180 degrees C).

  2. Lightly grease a baking tray with coconut oil or cover in parchment paper.

  3. Combine all of the ingredients in a bowl except for the golden raisins, making sure that all of the dry ingredients get coated in the maple syrup and coconut oil.

  4. Pour the mixture onto the baking tray and flatten it out with a spatula.

  5. Bake in the oven for 15 minutes (until golden brown).

  6. Remove the tray from the oven and sprinkle the golden raisins on top. You can gently press them in with your fingers or a spatula.

  7. Once cool, crumble or break it up and store it in an airtight container.

  8. Enjoy!


Personal Notes and Tips

  • If your golden raisins are a bit large, I recommend chopping them up into smaller pieces.

  • Combined, you should have about 1 cup of pepitas and chopped walnuts. I do about half and half (as I wrote in the ingredients list) but feel free to adjust the proportions to your liking.

  • Enjoy the granola on your smoothie bowls, yogurt, fresh berries, with some almond milk, or just by itself!

  • If you don't have pepitas (or don't particularly like them), I suggest replacing them with chopped pecans.
