Mini Orange Vanilla Muffins

Sweet, soft, and packed with nutrients! They make a great snack to keep in your fridge for when you are on the go! 🍊


Ingredients

  • 1/4 cup almond milk (or other non-dairy milk)

  • 1/4 cup orange juice

  • Zest from 1 orange

  • 2 tbsp melted coconut oil

  • 1/3 cup maple syrup

  • 1 tsp vanilla

  • 1/4 cup Tropeaka Lean Protein Vanilla

  • 1/4 cup almond meal

  • 3/4 cup buckwheat flower

  • 1 1/2 tsp baking powder

  • Pinch of salt


Method

  1. Preheat the oven to 350 degrees F (180 degrees C).

  2. In a bowl, combine the milk, orange juice, zest, coconut oil, maple syrup, and vanilla. Mix well.

  3. Add the remaining dry ingredients and stir until your batter is thick but smooth.

  4. Pour the batter into mini muffin molds or tin. Bake for 13-15 minutes or until golden and baked through.

  5. Let the muffins cool before removing them from the molds or tin. Store in an airtight container in the fridge for up to 1 week.

  6. Enjoy!


Personal Notes and Tips

  • Enjoy them with some nut milk, nut butter, jam, or perhaps some coconut cream.

  • I originally just put some orange zest on top for the pictures but it actually tasted really good! So if you have another orange, I recommend zesting some on top! 🧡
