Stir-fry
Tofu
Onion, diced
Garlic, minced
Celery
Bell peppers
Zucchini
Soybeans (frozen or fresh)
Broccoli
Corn (frozen or fresh)
Peas (frozen or fresh)
Spinach
Green onions
Bok choy
Carrots
Arugula
Kale
Rice
Noodles
Sauces
Coconut aminos (healthier, slightly sweeter alternative to soy sauce)
Soy sauce
Vegetable broth
Toasted sesame oil (do not cook with toasted sesame oil, just drizzle on top after)

Organic black salt (egg like taste)

Chili pepper flakes
Sesame seeds
Chopped roasted nuts

Method
Cut the tofu block into blocks of desired size, and chop up the veggies.
Heat some oil or water on a large skillet. Add the tofu, onions, and garlic.
Add a splash of coconut aminos, soy sauce, or other high-temperature resistant sauce of your preference.
Add the veggies and cooked rice and noodles if using, and frequently stir. Add any additional splashes of cooking sauce or vegetable broth throughout if desired.
Add any leafy greens last and wait until it wilts.
Remove from heat and add the toppings
You can eat it just like this, or you can put it in a tortilla, or on top of rice or noodles (if you didn't already at it into the stir-fry).

Personal Notes and Tips
I prefer extra firm tofu, and I like to keep it pre-cut in my fridge for times when I want to make this dish.
Next level: marinate your tofu in the sauces for a couple hours before you fry them up.
If you decide to wrap it in a tortilla, after wrapping it up, you can put it back on the skillet to heat it up for a little bit.
