Absolutely delightful spin on the classic peanut butter and jelly sandwich. If you have seen my other posts on overnight oats, then you probably have read that I basically take overnight oats with me everyday to school for multiple reasons: easy to bring along with you on adventures, to work, or to school, makes mornings easier because you prep it at night, it has a low glycemic index helping you stay fuller and have energy for longer, and tastes delicious! When you are craving a fresh take on a PB&J, this overnight oats is sure to please. 😊
Ingredients
1/2 cup of rolled oats
Cinnamon
Dash of vanilla extract
Non-dairy milk
Sliced strawberries
Peanut butter
Optional
Hemp seeds
Chia seeds
Maple syrup
Protein powder
Method
Pour the oats, vanilla extract, cinnamon, and any additions, into a mason jar.
Pour in just enough of the milk so that you can stir it all. Don't fill up the jar all the way.
Slice up the strawberries and pour them in the jar. (I like to fill mine close to the rim with strawberries❤️)
Add an additional splash of milk if needed and top it with a scoop of nut butter.
Close the jar with a lid and give it a little shake. Make sure the lid is on tight enough first.
Store it in the fridge overnight and enjoy in the morning!
Personal Notes and Tips
You can add in a splash of maple syrup for extra sweetness.
I didn't put an exact amount for cinnamon because everyone likes different amounts and honestly I never measure out my cinnamon.
I always mix up the kind of nut butters I used depending on my mood, but my favorites are almond, cashew, and peanut butter. If you want to be crafty, make your own by blending toasted nuts in a food processor!
I recommend buying some good lids for you mason jars. It makes it easier to shake, store, and transport your oats (and other creations).
If you don't have mason jars (or clean mason jars for that matter) you can make it in any cup, mug, or bowl, and just cover it.
