Sam's Dreamy Tofu Scramble

If you have been dreaming of a delicious morning scramble (without eggs), here it is!☀️


Traditionally on Christmas morning, we have a brunch spread starring an egg scramble. Now that I am vegan, I found this year's Christmas brunch as a great opportunity to finally try making a tofu scramble. It was delicious! My whole family, who are big egg eaters, absolutely loved it and ate it all up!


The magic of this recipe is that you can be really creative with it. It is a super versatile recipe! This time I just added all the same veggies my mom put in the egg dish (onions, broccoli, and bell peppers). I encourage you to experiment with different veggies, beans, mix-ins, toppings, and maybe even wrap it in a tortilla to make a tofurrito!



Ingredients


For the scramble

  • 1 tbsp vegan butter or olive oil

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 1 block (14 oz) firm tofu

  • 2 tbsp nutritional yeast

  • 1/2 tsp black salt or sea salt (or to taste)

  • 1/4 tsp ground turmeric

  • Handful of chives for garnish


Some additional ideas

  • Beans

  • Chopped veggies

  • Fresh herbs

  • Vegan cheese

  • Avocado

  • Tortilla

  • Toast

  • Salsa

  • Vegan sour cream

Method

  1. Heat the vegan butter or oil in a nonstick frying pan over medium-high heat, and add the onion and garlic.

  2. Sauté until the onion becomes soft and just begin to brown.

  3. With your fingers, crumble up the tofu into the pan.

  4. Add the nutritional yeast, salt, and turmeric, and stir to combine.

  5. Cook until heated through, about 5 minutes.

  6. Garnish with chives and serve hot, perhaps with toast or a tortilla or however you would like.

Personal Notes and Tips

  • Some of my favorite ways to eat this is wrapped up in a warm tortilla with some vegan butter, with toast, or with a fruit salad. Mmmmm. 😋

  • Get creative! I would love to see all the awesome ideas you come up with!

  • Honestly, when I make it, I don't measure out the nutritional yeast and salt + pepper and I don't always add in the turmeric and garlic. So don't feel like you need to follow this recipe exactly. Use it as a starting point.
