Stuffed Sweet Potatoes

This recipe is super versatile! It can be made in a couple minutes for a quick meal or in an hour for a bit fancier meal.
These kind of recipes are a great way to live a maintainable plant-based lifestyle.

Ingredients
Sweet Potatoes
Black beans
Fresh or frozen corn, defrosted
Tomatoes, sliced
Fresh herbs (I used parsley)
Nutritional yeast
Vegan butter or vegan sour cream
Salsa
Optional to Spice up the Beans
2 tbsp ground cumin
1 tbsp smoked paprika
1 tbsp curry powder
Salt + Pepper
Method
Preheat the oven to 425 degrees F (218 degrees C). Prick the sweet potatoes with a fork all over. Place them on a baking sheet and cook until tender (about 45-50 minutes).
Rinse the black beans really well, then warm them up either in the microwave or on a skillet. While the beans are on the skillet, add in the spices.
Slice open the sweet potatoes and add all of the toppings that you would like!
Personal Notes and Tips
If you are short on time, you can prepare the sweet potatoes in the microwave. To do so, prick the potato with a fork, then you can cover it in a wet paper towel, but it is not necessary. Microwave the potato for 5 minutes. It may take a little longer depending on how big it is.
LEVEL UP: Cover the potatoes in olive oil, then sprinkle on some salt and pepper.

This is a picture of some stuffed potatoes we made in a couple minutes: microwaved some sweet potatoes, can of black beans, frozen corn, and sprinkled on some nutritional yeast, parsley, and sliced tomatoes. That is a super simple delicious and nutritious meal!
